COLE CAMP — Brazilian bode peppers, gourmet pizza, fine food, the Sacramento valley in California, and a state-of-the-art kitchen all have one thing in common: cook Tim Holdeman, of Cole Camp.
Holdeman also makes soup that is parboiled and then frozen. The mixture needs only to be reheated until tender.
Tim Holdeman designed his Village Bakery kitchen for efficiency. Much of what he uses is within reach or at most a couple of steps.
The Villager pizza is loaded with pepperoni, ham, smoked sausage, Italian sausage with fennel, red and green peppers, mozzarella and Holdeman's own red sauce.
Holdeman has created a mild and hot salsa using the Brazilian bode, a round, colorful berry-type pepper.
